The connection between the primary and secondary point needs to be clear. If readers have to work hard to see the relationship, the phrase feels forced.

Weak: He enjoys hiking and, by extension, probably likes Italian food. (The connection between hiking and Italian food isn't obvious.)

Strong: He enjoys hiking and, by extension, spends a lot of time researching trail gear. (Hiking and trail gear have a clear connection.)

Using It as Filler

Some writers insert "and by extension" to make a sentence sound more formal without adding real meaning. If removing the phrase doesn't change what you're saying, you probably don't need it.
